  • 1 ounce rosemary (fresh)
  • 4 ounces olive oil (virgin)
  • 2 ounces lemon juice
  • 2 cloves garlic, chopped
  • 10 ounces water
  • 1 teaspoon peppercorns (black)
  • 4 artichokes, medium (4 medium, stems cut to 1.5 inches)

How to Make

  • Step 1: Combine first 7 ingredients in an ovenproof casserole (everything except artichokes).

  • Step 2: Add artichokes.

  • Step 3: Bake covered in preheated 375F oven 30 to 40 minutes until tender.

  • Step 4: Remove artichokes from liquid; put on tray to cool.

  • Step 5: Cut in quarters.

  • Step 6: Serve at room temperature.
