  • 1 1/2 cups cake flour
  • 1/4 teaspoon salt
  • 2 teaspoons baking powder
  • 2 tablespoons sugar
  • 1/4 teaspoon baking soda
  • 3 lemons, finely grated zest of
  • 2 teaspoons poppyseeds
  • 3 tablespoons unsalted butter (melted)
  • 3 eggs, separated
  • 1 1/2 cups milk
  • 1 1/2 teaspoons vanilla extract
  • FOR BLACKBERRY BUTTER (optional)
  • 1 cup blackberries
  • 1 tablespoon sugar
  • 1 lemon, juice of
  • 3 tablespoons unsalted butter (softened)

How to Make

  • Step 1: In a large mixing bowl, sift together the dry ingredients. Stir in the lemon zest and poppyseeds.

  • Step 2: In a medium bowl mix together the melted butter, egg yolks, milk, and vanilla. Make a well in the dry ingredients.

  • Step 3: Add the milk mixture and stir until just combined, being careful not to Overmix.

  • Step 4: In a medium, dry, clean bowl, beat the egg whites until soft peaks form.

  • Step 5: Gently fold them into the batter. Cook waffles in a preheated waffle iron according to the manufacturer's instructions.

  • Step 6: Serve with Blackberry Butter, if using, and maple syrup.

  • Step 7: In a stainless-steel, heavy-bottomed saucepan, combine the berries, sugar, and lemon juice.

  • Step 8: Place over high heat and bring to a boil. Reduce the heat and simmer for 5 - 7 minutes, until the juices have reduced to a syrupy consistency. Remove from heat and cool.

  • Step 9: Using a mixer, combine the softened butter and cooled berries until just blended. Refrigerate the butter if not using immediately.

  • Step 10: Let the butter stand at room temperature to soften before serving.
