Ingredients

The ingredients are:
  • 2 1/2 cups cooked rice
  • 3/4 cup chopped parsley
  • 1/3 cup coarsely grated cheddar cheese
  • 1/3 cup chopped onion
  • 3 tablespoons chopped green pepper
  • 1 garlic clove, minced
  • 1 can (13 ounce) evaporated milk (or coconut milk)
  • 2 eggs
  • 1/4 cup oil (vegetable)
  • 3/4 teaspoon salt
  • 1/2 teaspoon seasoned salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon MSG (optional)
  • 1 tablespoon lemon juice
  • 2 teaspoons freshly grated lemon peel
  • 1/4 teaspoon paprika

How to Make

  • Step 1: Preheat oven 350-degrees F.

  • Step 2: Mix together rice, parsley, cheese, onion, green pepper and garlic in a medium bowl.

  • Step 3: Pour mixture into a 2 quart casserole.

  • Step 4: In the same bowl, combine milk, eggs, vegetable oil, salt, seasoned salt, pepper, optional MSG, lemon juice and lemon peel; blend well.

  • Step 5: Sprinkle with paprika.

  • Step 6: Bake in the preheated oven until set and golden brown - 35 - 40 minutes.
