Ingredients

The ingredients are:
  • 600 grams beef sirloin steaks (trimmed, 3 x 200 grams sirloins)
  • Salt, to taste
  • Pepper, to taste
  • 270 grams dried soba noodles
  • 2 1/2 litres low-sodium chicken stock (10 cups)
  • Ginger root (4 cm piece fresh, cut into quarters)
  • 1/4 cup teriyaki sauce
  • 2 tablespoons white miso paste
  • 2 cups wombok (Chinese cabbage finely shredded)
  • 3 green spring onions, thinly sliced

How to Make

  • Step 1: Season beef with salt and pepper.

  • Step 2: Heat an oiled, large frying pan over a high heat and add beef and cook, for about 3 minutes on each side, for medium done, or until cooked to your liking.

  • Step 3: Remove and rest, loosely covered with foil for 5 minutes and then thinly slice.

  • Step 4: Cook the noodles according to the packet directions until tender and drain and cover to keep warm.

  • Step 5: Place stock and ginger in a large saucepan and bring to the boil and gently boil for 5 minutes and then stir in sauce and paste. Remove from heat and discard the ginger.

  • Step 6: To serve, divide noodles, beef and cabbage evenly among serving bowls. Spoon over hot stock. Sprinkle with onions.
