Ingredients

The ingredients are:
  • 1 pound Italian sausage
  • 1 garlic clove minced
  • 2 cans (28 ounces) beef broth (each can 14 ounce)
  • 1 can (14.5 ounce) stewed tomatoes (italian style)
  • 1 cup carrots, sliced
  • 1 can (14.5 ounce) great Northern beans (undrained)
  • 2 zucchini, cubed (small zucchini)
  • 2 cups spinach (packed, rinsed and torn)
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon salt

How to Make

  • Step 1: In large pot brown sausage with garlic. stir in broth, tomatoes and carrots. season with salt and pepper. reduce heat cover and simmer 15 minutes.

  • Step 2: Stir in beans with liquid and zucchini. Cover and simmer another 15 minutes or zucchini is tender.

  • Step 3: Remove from heat, and add spinach. Replace lid letting heat from soup cook spinach. ready in 5 minutes to eat.
