Step 1: Lay the tortillas flat and spread half of the cream cheese over each one; sprinkle half of the cole slaw,half of the red onion and half of the carrots on each one; place half of the tomato slices on each tortilla. Sprinkle eash with salt to taste and a dash of cayenne pepper.
Step 2: Roll each tortilla as tightly as possible ; secure with tooth picks if necessary; cut each in half. Wrap each half in a napkin with the open cut end an inch or two out to keep them secure while eating.
Step 3: If not eating right away, wrap tightly in plastic wrap and refrigerate 'til ready to serve.
