Ingredients

The ingredients are:
  • 180 grams bacon rashers (cut into strips, 6 shortcut bacon rashers - similar to Canadian bacon in style)
  • 150 grams brown mushrooms (Swiss brown, thinly sliced)
  • 1 red onion, thinly sliced
  • 110 grams puff pastry (1 sheet, frozen and thawed)
  • 150 grams cheddar cheese (vintage spreadable)
  • Baby rocket leaves, to garnish (optional)

How to Make

  • Step 1: Heat a large, oiled non-stick frying pan over a medium to high heat and add bacon, mushrooms and onion and cook, stirring, for about 2 to 3 minutes, or until onion is soft and then transfer to a bowl and season with salt and pepper and let cool slightly.

  • Step 2: Place pastry on an oiled oven tray and spread cheese over pastry, leaving a 1cm border and top evenly with bacon mixture.

  • Step 3: Cook in a hot oven (200C) for about 18 to 20 minutes, or until golden and cooked.

  • Step 4: Cut into quarters. Garnish with baby rocket leaves.
