Step 1: Heat a large, oiled non-stick frying pan over a medium to high heat and add bacon, mushrooms and onion and cook, stirring, for about 2 to 3 minutes, or until onion is soft and then transfer to a bowl and season with salt and pepper and let cool slightly.
Step 2: Place pastry on an oiled oven tray and spread cheese over pastry, leaving a 1cm border and top evenly with bacon mixture.
Step 3: Cook in a hot oven (200C) for about 18 to 20 minutes, or until golden and cooked.
Step 4: Cut into quarters. Garnish with baby rocket leaves.
