Step 1: Wash the potatoes, and cut them into bite-sized chunks.
Step 2: Preheat your air fryer to 400°F -- I did it for 2 minutes.
Step 3: In a mixing bowl, toss the potato chunks with olive oil, rosemary, salt, and pepper. Add the oiled potatoes to the air fryer basket.
Step 4: Air fry for 12 minutes, removing the basket to shake the potatoes 3-4 times during the cook time.
Step 5: Remove the potatoes and toss with the lemon zest and Parmesan cheese. Serve!
