The ingredients are:
  • 1 pound potatoes (red-skinned)
  • 1 tablespoon olive oil
  • 1 teaspoon fresh rosemary, finely chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon lemon zest
  • 2 tablespoons Parmesan, freshly grated

How to Make

  • Step 1: Wash the potatoes, and cut them into bite-sized chunks.

  • Step 2: Preheat your air fryer to 400°F -- I did it for 2 minutes.

  • Step 3: In a mixing bowl, toss the potato chunks with olive oil, rosemary, salt, and pepper. Add the oiled potatoes to the air fryer basket.

  • Step 4: Air fry for 12 minutes, removing the basket to shake the potatoes 3-4 times during the cook time.

  • Step 5: Remove the potatoes and toss with the lemon zest and Parmesan cheese. Serve!
