Ingredients

The ingredients are:
  • 1 pound potatoes (new potatoes, scrubbed and halved)
  • 1/4 cup dill (loosely packed fresh, stems removed)
  • 3/4 cup parsley (loosely packed fresh, stems removed)
  • 2 tablespoons thyme, minced (fresh)
  • 1//3 cup chives, chopped (fresh, coarsely chopped)
  • 3/4 cup low-fat mayonnaise
  • 1/3 cup low-fat buttermilk
  • 2 tablespoons vinegar (champagne vinegar or cider vinegar)
  • 3/4 teaspoons hot pepper sauce
  • Sea salt, to taste
  • Freshly ground pepper, to taste

How to Make

  • Step 1: Fill bottom of a larger saucepan with 1 inch of water and place steamer rack in pot. Add potatoes to the rack, cover and steam about 15-17 minutes until tender, checking periodically on water level and adding more water as needed.

  • Step 2: Meanwhile, combine the dill, parsley, thyme and chives with the mayonnaise in a food processor and process until the herbs are chopped and incorporated into the mayonnaise.

  • Step 3: With the motor running, slowly pour the buttermilk through the feed tube, then add the vinegar, hot sauce, salt and pepper; process until combined.

  • Step 4: Sample dressing and adjust seasonings.

  • Step 5: Serve the potatoes with the creamy herb dressing.
