Step 1: Preheat your oven to 180C.
Step 2: In a large bowl, combine the syrup, lemon juice and zest, egg yolks and vanilla, then fold in flour and baking powder and stir in the poppy seeds.
Step 3: Whisk the egg white in a mixer until stiff, adding salt part the way through and then fold into the batter, then place in a square baking tray and bake until lightly golden and cooked inside (about 20 to 25 minutes).
Step 4: Cool completely before topping with glaze.
Step 5: Tp prepare the glaze, stir all the ingredients together in a small bowl until smooth and allow glaze to set before slicing slab into bars.
