Ingredients

The ingredients are:
  • 1/4 cup maple syrup, pure
  • 1/4 cup lemon juice
  • 1 teaspoon lemon zest
  • 4 eggs, whites and yolks separated
  • 1 teaspoon vanilla-bean extract
  • 1 1/2 cups almond flour
  • 1 teaspoon baking powder
  • 1/4 cup poppy seeds
  • 1/4 teaspoon salt
  • CREAMY GLAZE:-
  • 1/4 cup cashew butter
  • 2 tablespoons maple syrup, pure
  • 2 tablespoons lemon juice, fresh

How to Make

  • Step 1: Preheat your oven to 180C.

  • Step 2: In a large bowl, combine the syrup, lemon juice and zest, egg yolks and vanilla, then fold in flour and baking powder and stir in the poppy seeds.

  • Step 3: Whisk the egg white in a mixer until stiff, adding salt part the way through and then fold into the batter, then place in a square baking tray and bake until lightly golden and cooked inside (about 20 to 25 minutes).

  • Step 4: Cool completely before topping with glaze.

  • Step 5: Tp prepare the glaze, stir all the ingredients together in a small bowl until smooth and allow glaze to set before slicing slab into bars.
