Ingredients

The ingredients are:
  • 1 cup zucchini, grated
  • 1 cup pumpkin, grated
  • 1/2 cup onion, finely chopped
  • 1/2 cup red capsicum, finely chopped
  • 1/2 cup spinach, finely chopped (baby)
  • 100 grams fetta cheese
  • 2 eggs
  • 1/3 cup wholemeal flour
  • 1 tablespoon olive oil (extra virgin)
  • TO SERVE (OPTIONAL)
  • 1/2 avocado, diced
  • 50 grams fetta cheese (extra)
  • Mint leaves, a handful
  • 1/2 red chilli, large sliced
  • 2 tablespoon sweet chilli sauce

How to Make

  • Step 1: Mix all ingredients except olive oil together in a large bowl until well combined.

  • Step 2: Heat oil in a large frying pan over low-medium heat and spoon a third of a cup of batter into the frying pan 4 times and fry for 5 minutes on each side (by then the fritters should be golden brown and the veggies nice and soft), remove fritters and continue till all batter is used.

  • Step 3: Serve topped with any of the extra options of choice.

  • Step 4: You can also serve these in a bread roll if you want something a bit more filling (this is great option for lunch leftovers).
