Ingredients

The ingredients are:
  • 2 avocado, whole
  • 1125 grams shrimp (1 cup prawns, cooked, peeled and de-veined specified - guessed weight)
  • 75 grams pear (firm and peeled and finely diced, 1/2 pear specified)
  • 1/4 red onion finely diced
  • 1/4 bunch dill, finely chopped
  • 1/2 long red chilli, seeded and finely diced
  • 1/4 cup aioli
  • Sea salt flakes
  • Freshly-milled black pepper
  • Baby cos wedge salad to serve
  • Ranch dressing to serve

How to Make

  • Step 1: Halve the avocadoes and remove the seeds and then cut a small flat surface on the base so that they sit on the plates.

  • Step 2: Combine the prawns, pear, onion, dill and chilli in a bowl and mix well. add the aioli and stir to combine, then spoon into the avocado

  • Step 3: Serve with baby cos wedge salad and ranch dressing.
