  • The following recipe serves 4 people.

Ingredients

The ingredients are:
  • 4 (600 grams) salmon fillets (skin and bones removed, 4 x 150 grams fillets)
  • Salt, to taste
  • Black pepper, to taste
  • 400 grams broccoli, cut into florets
  • 270 gram soba noodles (1 packet)
  • 2 green spring onions, thinly sliced diagonally
  • 2.5 grams nori sheets (toasted and cut into strips, 1 sheet)
  • 2 tablespoons sesame seeds (toasted)
  • 2 tablespoons sesame seeds (toasted)
  • FOR DRESSING
  • 1/4 cup tamari
  • 1/4 cup mirin seasoning
  • 2 tablespoons ginger root (fresh ginger, finely grated)
  • 1 garlic clove, minced
  • 1/2 teaspoon sesame oil
  • 1 tablespoon spring onion (green, finely chopped)
  • 2 teaspoons brown sugar

How to Make

  • Step 1: To make dressing, combine all ingredients in a small bowl and then set aside.

  • Step 2: Season salmon with salt and pepper and place on an oven tray lined with baking paper and cook in a moderate oven (180C0 for 10 minutes, or until just cooked through and then remove and cover lightly with foil and rest for 5 minutes.

  • Step 3: Boil, steam or microwave broccoli until just tender and then drain and rinse under cold water to cool and then drain.

  • Step 4: Prepare noodles according to packet directions and rinse under cold water and drain.

  • Step 5: Combine broccoli and noodles in aa large bowl and add half the combined onions, nori and seeds and then add the dressing and toss to coat.

  • Step 6: Divide soba noodles among serving plates and top with salmon and remaining onion mixture.

  • Step 7: TIP - toasted nori is available from supermarkets nationally and use kitchen scissors to shred toasted nor sheet.
