Ingredients

The ingredients are:
  • 250 grams unsalted butter (chopped room temperature)
  • 1/2 cup icing sugar (icing sugar mixture specified)
  • 1 teaspoon vanilla bean paste
  • 1 1/2 cups flour (plain)
  • 1/4 cup cornflour
  • 1 tablespoon passionfruit (pulp)
  • FOR ICING
  • 1 1/2 cups icing sugar (icing sugar mixture specified)
  • 1 tablespoon passionfruit (pulp)
  • 1 1/2 tablespoons milk

How to Make

  • Step 1: Grease an 18cm x 28cm rectangular slice pan and line the base and sides with baking paper, extending paper 3cm above pan edges.

  • Step 2: Beat butter, sugar and vanilla in a small bowl of an electric mixer until light and fluffy and transfer to a large bowl and stir in combined sifted flours and pulp.

  • Step 3: Spoon into prepared pan and using damp fingers, press to cover base and then smooth over top.

  • Step 4: Cook in a moderate oven (180°C) for about 25 minutes, or until lightly browned and firm to touch.

  • Step 5: Remove from oven and cool completely in pan.

  • Step 6: To make icing, combine sugar and pulp in a bowl and stir in enough milk until icing is smooth.

  • Step 7: Remove slice from pan and spread over icing and then stand at room temperature until set and cut into bars.
