Ingredients

The ingredients are:
  • 1/2 cup oil (peanut oil, 125 ml)
  • 600 grams green beans (fresh baby beans, trimmed
  • 1 tablespoons soy sauce (dark)
  • 1 tablespoons shaoxing (or dry sherry)
  • 2 teaspoons caster sugar
  • 1 teaspoons cornflour
  • 300 grams ground pork
  • 1 tablespoon xo sauce
  • 3 garlic cloves, minced
  • 1/2 bunch spring onions finely chopped to garnish
  • 1 1/2 cups cooked long grain rice (steamed to serve)

How to Make

  • Step 1: Heat oil in a large wo and add half the beans and fry for about 2 minutes, or until wrinkled and then using a slotted spoon, transfer to a tray lined with absorbent kitchen paper and then repeat with remaining beans.

  • Step 2: Remove wok from heat.

  • Step 3: Combine soy sauce, wine, sugar and cornflour in a small jug.

  • Step 4: Drain all but 2 tablespoons peanut oil from wok and heat reserved oil in wok over a high heat and add pork, XO sauce and garlic. and stir-fry for 2 to 3 minutes, or until browned and then add soy mixture and stir-fry for a further 1 minute and then return beans to wok and stir-fry until combined.

  • Step 5: Garnish with onions and serve with steamed white rice.
