  • 1/3 cup butter, melted
  • 1 1/2 cups sugar
  • 2 eggs
  • 1/2 cup applesauce
  • 3 tablespoons lemon juice (about 1 lemon)
  • 11/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Grated lemon zest from 1/2 to 1 lemon
  • 1/2 cup milk
  • 1 cup fresh or frozen blueberries

How to Make

  • Step 1: In a large bowl beat butter and sugar until light and fluffy. Beat in eggs applesace and lemon juice.

  • Step 2: Combine the flour, baking powder and salt and lemon zest; stir into egg mixture alternately with milk; beating well after each addition. Fold in blueberries.

  • Step 3: Pour into a greased 8-inch x 4-inch loaf pan. Bake at 350° for 60-70 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.
