Ingredients

The ingredients are:
  • 300 grams dry angel hair pasta
  • 1 lemon
  • 1 leek (300 grams)
  • 300 ml heavy cream (cream, pure or whipping)
  • 200 grams smoked salmon

How to Make

  • Step 1: Cook pasta in a large saucepan of boiling, salted water until tender, then drain and return to the pan and cover to keep warm.

  • Step 2: Meanwhile, finely grate 2 teaspoon rind from the lemon and squeeze out 1 tablespoon juice.

  • Step 3: Trim leek and halve lengthways and wash well and then thinly slice.

  • Step 4: Heat an oiled, large, non-stick frying pan over a medium and heat and add the leek and cook, stirring occasionally, for about 5 minutes or until soft and then add the cream and bring to the boil and gently boil for about 2 minutes or until slightly thickened and then add the salmon, rind, juice and pasta and season and toss to combine and stir until hot and serve the pasta with cracked black pepper (optional)
