Step 1: Squeeze 2 tablespoon juice from the limes and then combine the juice, sauce and honey in a large bowl and add the chicken and toss to coat and then place the chicke3n in a large roasting pan lined with baking paper.
Step 2: Cook in a hot oven (200C) for about 30 to 35 minutes, turning halfway or until chicken is cooked.
Step 3: Meanwhile cut bok choy in half lengthways and boil, steam or microwave until tender and then drain.
Step 4: Serve chicken with bok choy and sprinkle with toasted cashews.
Step 5: TIP - to prevent nuts going rancid, place leftover nuts in snap-lock bags and freeze for up to two months.
