Step 1: Preheat oven to 325*.
Step 2: Grease two 9 x 5 loaf pans, spray olive oil is a healthy choice.
Step 3: Beat eggs until foamy.
Step 4: Stir in wet ingredients: sugar, summer squash, oil, applesauce and vanilla.
Step 5: Sift together dry ingredients: flour, wheat flour, salt, baking soda, baking powder, cinnamon, nutmeg, and cloves.
Step 6: Gradually add to wet ingredients.
Step 7: Fold in raisins and optional nuts.
Step 8: Pour into prepared pans.
Step 9: Bake for 60 - 80 minutes, or until tooth pick inserted in center comes out clean.
Step 10: Cool for 10 minutes on cooling rack, then remove from pans.
Step 11: Cool completely on rack before slicing.
