  • 2 tablespoons oil
  • 1 cup onions,chopped
  • 1 cup celery, chopped
  • 1 clove garlic, smashed
  • 1 teaspoons creole spice
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 can( 28 ounce) tomatoes
  • 4 cups water
  • 1 1/2 cups black eyed peas, dry
  • 1 bay leaf
  • 1 tablespoons parsley,minced

How to Make

  • Step 1: Saute onions and celery until tender

  • Step 2: Add garlic

  • Step 3: Add seasonings

  • Step 4: Add tomatoes

  • Step 5: And water

  • Step 6: Add bay leaf, peas

  • Step 7: Bring to boil

  • Step 8: Turn down and simmer until peas are tender about 2 hours may need to add more water

  • Step 9: Stirring occasionally

  • Step 10: Stir in parsley at very last,take out bay leaf
