Ingredients

The ingredients are:
  • 1/2 cup tortilla chips, roughly broken up (a handful was specified)
  • 1/2 avocado, diced
  • 1/2 lime, juice of
  • 100 grams chicken breast, cooked and shredded (cooked chicken was specified)
  • 75 gram corn kernels, sweet tinned and drained
  • 100 grams tomatoes, (grape tomatoes and a large handful was specified)
  • 30 grams queso fresco, crumbled
  • 1/2 cup coriander, roughly chopped (a small handful was specified)
  • JALAPENO CREMA DRESSING:-
  • 1 tablespoon lime juice
  • 1 tablespoon Greek yoghurt
  • 10 grams jalapenos, pickled and finely chopped (3 slices was specified)
  • Salt, to taste
  • Pepper, to taste

How to Make

  • Step 1: Place the tortilla chips in a small airtight container.

  • Step 2: Toss the avocado in the lime juice and then add the remaining salad ingredients, then tip into your lunchbox.

  • Step 4: Pour the dressing over the salad just before serving and toss through the tortilla chips.
