  • 1/8 teaspoon nutmeg
  • 3 cups water
  • 2 tablespoons oil
  • 2 cups onion, chopped
  • 1 cup carrots, chopped
  • 3 cups frozen lima beans
  • 1 cup frozen peas
  • 1/2 cup frozen corn
  • 1 cup heavy cream
  • 2 tablespoons parsley,minced
  • 1 teaspoon seasoned salt
  • 1/2 teaspoon pepper

How to Make

  • Step 1: Boil sweet potatoes in water until soft drain

  • Step 2: Mash with cream cheese and nutmeg

  • Step 3: Meanwhile in skillet

  • Step 4: Heat oil and add onions

  • Step 5: Cook until tender

  • Step 6: Add carrots and frozen vegetables

  • Step 7: Season

  • Step 8: When veggies are warm add cream and parsley

  • Step 9: Simmer on low until cream thickens around vegetables

  • Step 10: In bowl add mixed vegetables and top with sweet potatoes in center
