Step 1: Combine mince, eggs, breadcrumbs, onion, feta and herbs in a large bowl and season with salt and pepper and then mix well and then shape into eight rissoles – about 1/2 cup in each.
Step 2: Heat oil in a large ovenproof frying pan over a medium to high heat and then add rissoles and cook, turning occasionally, for about 5 minutes, or until browned.
Step 3: Transfer frying pan to a hot oven (200C) and cook for about 10 minutes, or until cooked through and then remove and rest for 5 minutes.
Step 4: Meanwhile, boil or microwave potatoes, carrots and zucchini until tender.
Step 5: Serve patties with relish and vegetables and garnish with mint leaves.
