Ingredients

The ingredients are:
  • 600 grams ground beef (mince)
  • 2 eggs
  • 1/2 cup dried breadcrumbs
  • 1 onion, peeled, grated
  • 100 grams feta cheese (crumbled)
  • 1/3 cup chopped fresh parsley
  • 1/3 cup chopped fresh mint, plus extra for decoration
  • Salt, to taste
  • Pepper, to taste
  • 2 tablespoons olive oil
  • 800 grams potatoes, chopped
  • 2 carrots, peeled, thickly sliced
  • 2 zucchini, halved lengthways, thickly sliced
  • 1/2 cup beet relish

How to Make

  • Step 1: Combine mince, eggs, breadcrumbs, onion, feta and herbs in a large bowl and season with salt and pepper and then mix well and then shape into eight rissoles – about 1/2 cup in each.

  • Step 2: Heat oil in a large ovenproof frying pan over a medium to high heat and then add rissoles and cook, turning occasionally, for about 5 minutes, or until browned.

  • Step 3: Transfer frying pan to a hot oven (200C) and cook for about 10 minutes, or until cooked through and then remove and rest for 5 minutes.

  • Step 4: Meanwhile, boil or microwave potatoes, carrots and zucchini until tender.

  • Step 5: Serve patties with relish and vegetables and garnish with mint leaves.
