Step 1: Toss beef with sesame oil in a bowl.
Step 2: Trim gai lan and cut crossways into thirds and then separate leaves and stems, cutting larger stems lengthways in half.
Step 3: Heat a large, deep, non-stick frying pan over a medium to high heat and add beef and cook for about 3 to 4 minutes on each side, or until cooked to your liking and remove to rest, loosely covered with foil, for 5 minutes.
Step 4: Meanwhile, heat vegetable oil in same frying pan over a medium heat and add garlic and miso paste and cook, stirring, for 30 seconds and then add beans and gai lan stems with 2 tablespoons water. and cook, stirring occasionally, for about 2 minutes, or until just tender and then add snow peas and gai lan leaves and cook, stirring, for a further 2 minutes, or until just wilted.
Step 5: Serve beef with rice, vegetables and pan juices and sprinkle over seeds.
