Ingredients

The ingredients are:
  • 1 cup almond nuts (natural almonds, 150g)
  • 1 cup cashew nuts (roasted unsalted, 150g)
  • 1/2 cup shredded coconut
  • 1 cup oats, rolled
  • 150 grams dates (pitted, 1 cup)
  • 1/4 cup cocoa powder ( Dutch process)
  • 2 tablespoons honey (use agave or maple syrup to make it vegan)
  • 80 ml coconut oil (melted, 1/3 cup specified)
  • 1/2 cup goji berries
  • 1/4 cup pepitas

How to Make

  • Step 1: Lightly grease an 18cm x 28cm rectangular slice pan and line base and sides with baking paper, extending paper 5cm above pan edges.

  • Step 2: Process almonds and cashews in a food processor until finely chopped and then add coconut, oats, dates, cocoa, honey and oil and process until combined.

  • Step 3: Add berries and pepitas and pulse until just combined and then press into prepared pan.

  • Step 4: Refrigerate for about 4 hours, or until firm.

  • Step 5: Lift slice out of pan. Cut into bars.
