  • 2 cans (30 ounce ) hominy (15 ounce, each,drained)
  • 1/4 cup butter
  • 2 cloves garlic ,smashed
  • 2 green onions, minced
  • 8 ounces mushrooms, sliced
  • 1/8 teaspoon pepper
  • 1/4 cup milk
  • 8 eggs
  • 1/2 cup tomato, chopped
  • 1 avocado, chopped
  • 2 cups cojack cheese, shredded

How to Make

  • Step 1: Heat butter in skillet

  • Step 2: Add onions and drained hominy

  • Step 3: And garlic and mushrooms. Season

  • Step 4: When tender, add milk and eggs on top

  • Step 5: Put cheese on top of eggs

  • Step 6: Pop in broiler and cook until eggs are done and cheese melts about 5 minutes

  • Step 7: Top with tomatoes and avocado
