Ingredients

  • 1 1/2 cup brown sugar
  • 1 egg
  • 1 1/2 cups rhubarb, minced
  • 1/2 teaspoon baking soda
  • 1/2 cup walnuts, chopped
  • 2/3 cup oil (mazola )
  • 1 cup sour milk
  • 1/2 teaspoon salt
  • 2 1/2 cup flour
  • FOR GLAZE
  • 1 tablespoon butter
  • 1 tablespoons water, hot
  • 1/2 cup powdered sugar

How to Make

  • Step 1: Preheat oven to 350

  • Step 2: Mix brown sugar and oil and egg. Add milk

  • Step 3: Sift dry ingredients . Add to wet

  • Step 4: Add rhubarb and nuts, mix lightly

  • Step 5: Put in Pam-sprayed muffin pans

  • Step 6: Bake for about 12 minutes ,no time given so watch and check for doneness

  • Step 7: Mix glaze when muffins are cooled melt butter in hot water first add sugar mix
