Ingredients

The ingredients are:
  • 1 kilogram peaches (large ripe and halved and stones removed, 6 peaches specified)
  • 1/3 cup orange juice
  • 1/3 cup honey
  • Vanilla ice-cream, to serve
  • FOR TOPPING
  • 150 grams biscotti cookies (almond)
  • 1/4 cup almonds, flaked
  • 100 grams unsalted butter (melted)

How to Make

  • Step 1: To make topping, process biscotti in a food processor until coarsely crushed and then transfer to a bowl and stir in almonds and butter.

  • Step 2: Place peaches, cut-side up, in a single layer in a 22cm x 32cm rectangular, ovenproof dish and drizzle over juice, then honey and top evenly with biscotti topping.

  • Step 3: Cook in a moderate oven (180C) for about 18 to 20 minutes, or until peaches are tender and topping is golden brown.

  • Step 4: Serve warm or cold with ice-cream.
