Ingredients

The ingredients are:
  • 4 cups hash brown potatoes (frozen, shredded)
  • 1 cup Monterey Jack cheese, shredded (and Cheddar cheese)
  • 1 cup diced ham, cooked (fully cooked ham)
  • 1/2 cup green bell pepper (chopped)
  • 1/4 to 1/2 cup green onions, sliced (or yellow onion)
  • 6 large eggs (beaten)
  • 1 can (12 ounce) evaporated milk (reg., skim, or non-fat)
  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt

How to Make

  • Step 1: Preheat oven to 350 degrees.

  • Step 2: Grease a 2 quart glass baking dish.

  • Step 3: Arrange potatoes evenly in bottom of dish and sprinkle the cheese, ham, green pepper and green onion over potatoes.

  • Step 4: In a bowl whisk together the eggs, evaporated milk, pepper and salt; mix well.

  • Step 5: Pour egg mixture over potato mixture.

  • Step 6: Baked uncovered in a 350 degree oven for 55-60 minutes or until center appears set. Let stand 5 minutes before serving.
