Ingredients

The ingredients are:
  • 1 kilogram cauliflower (1 large head of cauliflower)
  • 3 onions, halved and thickly sliced
  • 1/2 tablespoon harissa
  • 1/3 cup olive oil
  • 1.2 kilograms sirloin steaks (6 x 200 gram steaks)
  • 1/2 cup almonds, roasted and chopped
  • OLIVE DRESSING:-
  • 230 gram olives, drained (jar of pitted Sicilian olives specified)
  • 1/2 cup parsley, fresh and chopped
  • 1/2 cup olive oil
  • 1/3 cup red wine vinegar
  • 1 tablespoon mustard, wholegrain
  • 1 garlic clove, small and minced
  • 2 teaspoons honey

How to Make

  • Step 1: To make the dressing, chop olives (you will need 2/3 cup) and place in a large jug with remaining ingredients and season with salt and pepper and mix well to combine and then refrigerate, covered.

  • Step 2: Cut cauliflower into 1cm thick slices and place in a large bowl with onions, spice blend and a 1/4 cup of the oil and toss well.

  • Step 3: Heat a lightly oiled, large, barbecue flat plate over a medium heat and add cauliflower and cook tunring occasionally for about 20 to 25 minutes or until golden brown and tender and then remove and cover to keep warm.

  • Step 4: Increase heat on barbecue to high.

  • Step 5: Toss steaks with remaining oil and season with salt and pepper and cook, on barbecue flat plate for about 4 minutes on each side or until cooked to your liking and then remove and rest, loosely covered with foil for 3 to 4 minutes.

  • Step 6: Add almonds and 1/2 cup of dressing to cauliflower and toss to combine.

  • Step 7: Serve beef with cauliflower and remaining dressing.
