Step 1: Make 8 slits at least half way through roast and set aside.
Step 2: Sliver the garlic cloves into four pieces each and press into slits.
Step 3: Allow roast to sit at room temperature for 1 hour.
Step 4: Mix together the remaining ingredients and rub all over roast.
Step 5: Set roast on a wire rack inside a baking pan and insert meat thermometer in middle of roast and halfway through. Place in preheated 425 degree oven; cook for 15 minutes. Reduce heat to 325 and continue to cook for another 2 hours; pour 1 cup water in bottom of pan and cook for another hour or until thermometer reads 145 degrees. Keep in mind the time will vary depending on your oven.
Step 6: Take out of oven and cover with foil letting it rest for 30 minutes.
Step 7: Place on cutting board, slice and enjoy!
