Step 1: In 2 pots over high heat heat 1 tablespoon in each pot and then divide the apples between the pots and saute them until golden (under 5 minutes). Divide the pine nuts between the pots and add them to the apples, cooking them for another 3-5 minutes or until toasted (watch carefully). Add 2 tablespoons of oil to each pot and then divide the shallots and raisins between the pots; stirring to combine. Divide the spinach between the pots; cover and cook until wilted (only a few minutes). Season with salt and pepper and transfer to a serving dish.
