Ingredients

The ingredients are:
  • 1 1/2 cups dates (dried)
  • 1 cup almond meal
  • 1/3 cup cacao powder
  • 2 cups Rice Krispies (Rice Bubbles)
  • 1/4 cup maple syrup (pure)
  • 1 teaspoon vanilla extract
  • 14 grams almond nuts (12 almonds, blanched)

How to Make

  • Step 1: Place dates, almond meal and cacao in a food processor and process until dates are finely chopped ad then add Rice Bubbles, syrup and vanilla and process until mixture forms a thick paste.

  • Step 2: Using clean hands, roll heaped tablespoons of the mixture into balls and then flatten slightly to form a 5cm rounds and then press an almond in the centre of each one and place them on a tray lined with baking paper and refrigerate the cookies for about 2 hours or until firm.

  • Step 3: TIP - studies have found that cacao can help regulate blood pressure and boost the immune system, and is also associated with healthy liver function.
