Step 1: Heat oil in a large frying pan over medium-high heat and add onion and cook, stirring occasionally, for 8 minutes or until softened and then reduce heat to medium and cook, stirring often, for a further 15 minutes or until onion is caramelised.
Step 2: Stir in garlic and thyme and cook for a further 2 to 3 minutes or until onion is a deep golden brown.
Step 3: Transfer onion mixture to a heatproof bowl and let stand for 5 minutes to cool and then add sour cream, mayonnaise and Worcestershire sauce and stir to combine.
Step 4: Season with salt and pepper and stir in chives and sprinkle with extra chives and serve with toasted crusty bread and chopped vegetables.
