Ingredients

The ingredients are:
  • 2 tablespoons olive oil (extra virgin)
  • 2 brown onions, finely chopped
  • 2 garlic cloves, crushed
  • 1 1/2 teaspoons fresh thyme leaves, finely chopped
  • 250 grams sour cream
  • 1/4 cup mayonnaise ( whole-egg)
  • 1 1/2 teaspoons Worcestershire sauce
  • 1/4 cup fresh chives, finely chopped, plus extra to serve
  • Crusty bread, toasted, to serve
  • Vegetables, chopped, to serve

How to Make

  • Step 1: Heat oil in a large frying pan over medium-high heat and add onion and cook, stirring occasionally, for 8 minutes or until softened and then reduce heat to medium and cook, stirring often, for a further 15 minutes or until onion is caramelised.

  • Step 2: Stir in garlic and thyme and cook for a further 2 to 3 minutes or until onion is a deep golden brown.

  • Step 3: Transfer onion mixture to a heatproof bowl and let stand for 5 minutes to cool and then add sour cream, mayonnaise and Worcestershire sauce and stir to combine.

  • Step 4: Season with salt and pepper and stir in chives and sprinkle with extra chives and serve with toasted crusty bread and chopped vegetables.
