  • 1 1/4 cups mango pieces, frozen (or over ripe fresh mango)
  • 1 lime, juice of
  • 2 teaspoons coconut essence, natural
  • 1/4-1/2 cup desiccated coconut

How to Make

  • Step 1: Put cups of frozen mango pieces, lime juice and natural coconut essence in a food processor and puree.

  • Step 2: Spoon into small glasses and 1/4 cup capacity, insert a halved paddle pop stick into each and freeze for 8 hours or overnight.

  • Step 3: Remove from glasses and roll in desiccated coconut just before serving.

  • Step 4: TIP - depending on the natural sweetness of the mango you're using, you might want to add a teaspoon or two of icing sugar or honey to sweeten these.
