Step 1: Cook noodles according to packet directions and then drain and rinse under cold water and drain again and then cut the noodles into pieces using kitchen scissors.
Step 2: Halve the cucumbers lengthways and then using a teaspoon, scrape away seeds and then thinly slice.
Step 3: Heat an oiled large frying pan over a high heat and add mince in two batches and cook, stirring and breaking up mince, for about 3 minutes, or until browned and cooked.
Step 4: Return all the mince to the pan and stir in sauce and tosss warm mince in a large bowl with noodles, cucumber and coriander and drizzle with the dressing and serve with lime wedges.
