Step 1: Place turkey, stuffing mix, feta, olives, oregano, onions, rind, juice, water and garlic in a food processor and season with salt and pepper and process until combined.
Step 2: Place one sheet of pastry on a clean, dry bench with the long side facing you. Brush with butter. Place another sheet on top and brush with more butter.
Step 3: Place a generous 1⁄2 cup of turkey mixture down one long side of pastry and mould into a tube about 2cm in diameter and roll to enclose.
Step 4: Place on lined oven tray and shape into a spiral and then repeat to make 6.
Step 5: Brush with butter and sprinkle with nuts.
Step 6: Cook in a hot oven (200C) for about 20 minutes, or until golden brown.
Step 7: Garnish with fresh oregano and serve with lemon cheeks.
