Ingredients

The ingredients are:
  • 500 grams cooked turkey meat (leftovers, shredded )
  • 100 grams dried stuffing mix (1 cup seasoned stuffing mix specified)
  • 200 grams feta cheese (crumbled)
  • 1 cup kalamata olives (pitted)
  • 1/2 cup oregano leaves (fresh)
  • 2 spring onions, thinly sliced
  • 1 tablespoon finely grated lemon rind
  • 2 tablespoons lemon juice
  • 2 tablespoons water
  • 2 cloves garlic, crushed
  • Salt and pepper, to taste
  • 12 sheets (24 grams) filo pastry (12 sheets specified)
  • 150 grams butter, melted
  • 1/4 cup pine nuts
  • Extra fresh oregano, to garnish
  • Lemon cheeks, to serve

How to Make

  • Step 1: Place turkey, stuffing mix, feta, olives, oregano, onions, rind, juice, water and garlic in a food processor and season with salt and pepper and process until combined.

  • Step 2: Place one sheet of pastry on a clean, dry bench with the long side facing you. Brush with butter. Place another sheet on top and brush with more butter.

  • Step 3: Place a generous 1⁄2 cup of turkey mixture down one long side of pastry and mould into a tube about 2cm in diameter and roll to enclose.

  • Step 4: Place on lined oven tray and shape into a spiral and then repeat to make 6.

  • Step 5: Brush with butter and sprinkle with nuts.

  • Step 6: Cook in a hot oven (200C) for about 20 minutes, or until golden brown.

  • Step 7: Garnish with fresh oregano and serve with lemon cheeks.
