Step 1: Line a 20cm x 30cm slice tin with non stick baking paper.
Step 2: Place the biscuits/cookies in a food processor and process until fine nd then add the butter and process until combined and then transfer to the tin and using the back or a spoon, press the mixture evenly into the base and refrigerate for 15 to 20 minutes or until firm.
Step 3: Place the chocolate and oil in a small bowl and mix to combine and then pour the chocolate over the biscuit base and allow to stand for 5 minutes or until just starting to set.
Step 4: Sprinkle with the crushed candy canes and refrigerate for 1 to 2 hours or until firm.
Step 5: Allow to stand at room temperature for 5 minutes before cutting into bars with a hot knife to serve
