  • 1 cups sugar
  • 2 eggs, beaten
  • 1 cup heavy whipping cream
  • 3/4 cup shredded coconut (Bakers)

  • Step 1: Beat eggs with sugar

  • Step 2: Sift dry ingredients together

  • Step 3: Add to sugar

  • Step 4: Add alternately with cream

  • Step 7: Roll 1/4 inch thick on floured board. Dredge in sugar

  • Step 8: Cut with 3 1/2 round cutter

  • Step 9: Bake in hot oven 425 degrees for 13 minutes
