Ingredients

The ingredients are:
  • FOR GIBLETS
  • Chicken giblets
  • 1 onion, peeled
  • 4 celery tops
  • 1/2 teaspoon dried thyme
  • 3 sprigs parsley
  • 2 cloves
  • 1/8 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic salt
  • FOR CHICKEN
  • 1/2 cups all purpose flour
  • 1/8 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic salt
  • 2 tablespoons butter
  • 4 to 6 pound whole chicken (cut up)
  • FOR PUDDING:
  • 2 tablespoons butter
  • 3 large eggs
  • 1 cup whole milk
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • Paprika, for garnish

How to Make

  • Step 1: Giblets: In saucepan, cover the giblets with water. Add onion, celery and seasonings. Cover and cook over low heat for 1 hour and 15 minutes. Strain, saving broth and giblets.

  • Step 2: Chicken: Combine flour and seasonings in a shallow bowl. Heat butter in skillet. Roll chicken in flour and brown on both sides.

  • Step 3: Combine chicken with broth in a large pot. Cover and cook over medium low heat until meat is tender, 30-40 minutes, adding water as necessary. Meanwhile, preheat oven to 375°.

  • Step 4: Remove chicken from broth and place in a large casserole dish.

  • Step 5: Pudding: Combine pudding ingredients in mixer. Beat until creamy. Pour batter over chicken in casserole dish. Garnish with paprika.

  • Step 6: Bake for 30 minutes or until batter turns golden brown.
