Step 1: Giblets: In saucepan, cover the giblets with water. Add onion, celery and seasonings. Cover and cook over low heat for 1 hour and 15 minutes. Strain, saving broth and giblets.
Step 2: Chicken: Combine flour and seasonings in a shallow bowl. Heat butter in skillet. Roll chicken in flour and brown on both sides.
Step 3: Combine chicken with broth in a large pot. Cover and cook over medium low heat until meat is tender, 30-40 minutes, adding water as necessary. Meanwhile, preheat oven to 375°.
Step 4: Remove chicken from broth and place in a large casserole dish.
Step 5: Pudding: Combine pudding ingredients in mixer. Beat until creamy. Pour batter over chicken in casserole dish. Garnish with paprika.
Step 6: Bake for 30 minutes or until batter turns golden brown.
