Ingredients

  • 2 cups all purpose flour
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon parsley flakes
  • 3 1/2 pound chicken, cut up
  • 6 tablespoons butter
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 1 teaspoon minced garlic
  • 1/4 teaspoon dried thyme
  • 2 teaspoons curry powder
  • 15 ounces stewed tomatoes
  • 2 1/2 tablespoons currant jelly

How to Make

  • Step 1: Stir flour, salt, pepper and parsley in a shallow bowl. Roll chicken in the mixture.

  • Step 2: Melt butter in a large skillet and brown chicken on both sides, remove chicken.

  • Step 3: In remaining butter, saute onion, and pepper, seaoning with thyme and curry powder.

  • Step 4: Stir in tomatoes, then add chicken, skin side up.

  • Step 5: Cover and simmer for 30 minutes. Meanwhile, preheat oven to 450°.

  • Step 6: Stir in jelly, blending thorougly with sauce.

  • Step 7: Place in a greased casserole dish, cover and bake for 25 minutes or until chicken is tender.
