Ingredients

The ingredients are:
  • 180 grams ramen noodles (2 x 90 gram packets was specified, dried noodles )
  • 150 grams peas (frozen, 1 cup)
  • 150 grams soy beans (frozen edamame, podded,1 cup)
  • 200 grams tofu (marinated teriyaki tofu, halved horizontally)
  • 125 grams satay sauce
  • 60 grams bean sprouts (1 cup)
  • 2 spring onions (shredded)
  • 40 grams peanuts (salted, roasted, chopped 1/4 cup)
  • 2 tablespoons shallots (fried)
  • Peppermint leaves (fresh, to serve)
  • Coriander leaves (fresh, to serve)
  • Red chilli (sliced, fresh to serve, optional)

How to Make

  • Step 1: Cook noodles in a saucepan of boiling water following packet directions and add peas and edamame to the pan for the last 2 minutes of cooking and then drain and rinse well under warm water.

  • Step 2: Meanwhile, heat a non-stick frying pan over medium heat and spray with oil and cook the tofu for 1-2 minutes each side, until light golden and then cut each into 4 triangles.

  • Step 3: Place the noodles, peas and edamame in a large bowl and add the satay sauce and toss to combine.

  • Step 4: Divide among serving bowls and top with tofu, bean sprouts, spring onion and peanuts and then top with fried shallots, herbs and chilli, if you like.
