Ingredients

The ingredients are:
  • 2 tablespoons olive oil
  • 500 grams haloumi (cut into 1cm thick slices, 2 x 250 grams packets specified)
  • 60 grams rocket ( baby rocket leaves)
  • 250 grams pitted cherries (fresh cherries, halved)
  • 1/3 cup peppermint (fresh leaves)
  • FOR FRESH CHERRY VINAIGRETTE
  • 75 grams pitted cherries (fresh cherries, finely chopped)
  • 1/3 cup olive oil (extra virgin)
  • 2 tablespoons red wine vinegar
  • 1 small clove garlic, minced
  • 2 teaspoons wholegrain mustard
  • 1 teaspoons honey
  • Salt, to taste
  • Pepper, to taste

How to Make

  • Step 1: To make vinaigrette, combine all ingredients in a jug and stir well and then set to one side until needed.

  • Step 2: Heat oil in a large frying pan over a medium heat. Add haloumi in two batches and cook for about 2 minutes on each side, or until golden and set to one side.

  • Step 3: Arrange rocket on a platter and top with haloumi, cherries and mint and spoon over vinaigrette.
