Step 1: To make vinaigrette, combine all ingredients in a jug and stir well and then set to one side until needed.
Step 2: Heat oil in a large frying pan over a medium heat. Add haloumi in two batches and cook for about 2 minutes on each side, or until golden and set to one side.
Step 3: Arrange rocket on a platter and top with haloumi, cherries and mint and spoon over vinaigrette.
