7-Up Jello Salad

Ingredients

The ingredients are:
  • 1 can (20 ounce) pineapple, crushed (juice squeezed out and saved for mousse)
  • 2 cups water, boiling
  • 1 package (6 ounce) lemon jello
  • 2 cups lemon lime soda (or 7up)
  • 3 whole bananas (sliced)
  • 1 cup miniature marshmallows
  • FOR PINEAPPLE MOUSSE
  • 2 tablespoons all-purpose flour
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 cup pineapple juice
  • 3 tablespoons butter
  • 1 cup heavy whipping cream

How to Make

  • Step 1: The day before: pour boiling water over jello, mix

  • Step 2: Stir in 7up, mix

  • Step 3: Add pineapple and bananas and miniature marshmallows

  • Step 4: Pour into mold or a nice bowl you will be topping the jello with mousse either way

  • Step 5: Chill overnight until set

  • Step 6: The Next day - prepare mousse: in a sauce pan mix everything but whipping cream, cook on low simmer until thickened stirring constantly with a whisk

  • Step 7: Chill in refrigerator until cool,

  • Step 8: In a separate bowl whip cream until stiff peaks form

  • Step 9: Fold whipped cream gently into cool/cold mixture with about 1/3 of a cup at a time

  • Step 10: Unmold jello and top with mousse
