Step 1: Preheat oven to 375 degrees F.
Step 2: Peel, trim and slice the turnips very thinly (You can use a mandolin).
Step 3: Melt 2 tablespoons of butter in a cast iron skillet.
Step 4: Place a layer of turnips on the bottom of the skillet, on top of the melted butter.
Step 5: Lightly season with salt and pepper.
Step 6: Add 1/3 cup Cheddar cheese and 1/3 cup Parmesan cheese on top of the turnip and butter.
Step 7: Add 1 tablespoon of butter, cut into small pieces, on top of the cheese layer.
Step 8: Drizzle 2 tablespoon milk over the turnips, and top with some fresh thyme.
Step 9: Repeat steps 4-7 until you have 3 layers of each, ending with the cheese layer.
Step 10: Bake for 25-30 minutes, until brown and bubbly.
