Ingredients

The ingredients are:
  • 1/2 cup peanut butter (smooth)
  • 125 ml coconut milk (1/2 cup)
  • 2 red chillies (large long and finely chopped plus extra to serve)
  • 1/4 cup fish sauce (60ml)
  • 1.2 kilogram chicken wings (middle wings were specified which is the drumette looking part of the wing)
  • Peanut oil, for brushing
  • TO SERVE
  • Sliced green onion
  • Sliced baby cucumbers
  • Roasted salted peanuts, chopped

How to Make

  • Step 1: Place the peanut butter, coconut milk, chilli and fish sauce in a large bowl and whisk to combine.

  • Step 2: Remove one cup of the marinade and reserve.

  • Step 3: Add the chicken wings to the large bowl and toss to coat and set aside for 30 minutes to marinate.

  • Step 4: Preheat a chargrill pan or barbecue over a medium heat.

  • Step 5: Thread the wing onto eight metal skewers and brush with oil.

  • Step 6: Cook for 4 to 5 minutes each side or until chicken is charred and cooked through.

  • Step 7: Serve with the reserved stay auce, extra chilli, onion, baby cucumbers and peanuts
