Ingredients

The ingredients are:
  • FOR MEATBALLS
  • 2 pounds lean ground beef
  • 2 large eggs
  • 1 cup bread crumbs (dry)
  • 3/4 cup finely chopped yellow onion
  • 1/2 teaspoon ground ginger
  • 1 teaspoon seasoning salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons Worcestershire sauce
  • FOR SAUCE:
  • 1 can (20 ounce) pineapple chunks (in juice)
  • 1/2 cup water (or use additional pineapple , or orange juice)
  • 3 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 3/4 cup brown sugar
  • 3 tablespoons cornstarch
  • 1/2 teaspoon dried ground ginger
  • 1/2 teaspoon seasoning salt ( or any all purpose seasoning)
  • 1 to 2 green bell peppers (large or 2 small, seeded and cut into small pieces)

How to Make

  • Step 1: Preheat the oven to 375F and line a baking sheet with parchment paper or non-stick foil.

  • Step 2: Mix together the meatballs; ground beef, eggs, bread crumbs, onions, 1/2 teaspoon ginger, 1 teaspoon seasoning salt,

  • Step 3: 1/2 teaspoon black pepper and 2 teaspoons Worcestershire - then shape into 1" meatballs, place onto the baking sheet and bake for about 30 minutes.

  • Step 4: Place all of the sauce ingredients into the crockpot and whisk together until combined - add the meatballs and cook, stirring often.
