Ingredients

The ingredients are:
  • 4 (800 grams) skinless snapper fish fillets (4 x 200 gram boneless thick white fish fillets specified)
  • 1 tablespoon harissa seasoning
  • 1 tablespoon olive oil
  • ROASTED BROCCOLI SALAD
  • 800 grams broccoli, trimmed, chopped
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • 1/2 cup dried apricots (chopped )
  • 1/2 cup almond nuts (chopped)
  • 2 green spring onions, thinly sliced
  • 1 cup coarsely chopped parsley (fresh)
  • 1/4 cup French salad dressing (bottled)

How to Make

  • Step 1: To make salad, arrange broccoli in a single layer on a large oven tray lined with baking paper and drizzle with the oil and season with salt and pepper.

  • Step 2: Cook in a hot oven (200C) for about 20 minutes, or until tender.

  • Step 3: Meanwhile, toss fish in combined seasoning and oil and place on a separate oven tray lined with baking paper.

  • Step 4: Cook in same hot oven for about 10 minutes, or until cooked through.

  • Step 5: Transfer broccoli to a large bowl. Add remaining salad ingredients and toss well and serve fish with salad.
