Step 1: Heat oil in a large, deep pan and add onion and garlic and cook gently over low heat for 2 to 3 minutes and then add white wine and bring to the boil and simmer for 3 minutes.
Step 2: Add tomato, tomato paste, chilli flakes and sugar and stir well and bring to the boil and then add mussels to the pan, with a lid and cook for a few minutes over high heat, shaking pan occasionally.
Step 3: Remove lid and using a slotted spoon, remove mussels as soon as they open and place in a serving dish. discarding any mussels that do not open.
Step 4: Remove pan from heat and add parsley and stir well.
Step 5: Pour sauce over mussels and serve immediately with crusty bread.
