Ingredients

The ingredients are:
  • 1 tablespoon olive oil
  • 1 large brown onion, finely chopped
  • 2 garlic cloves, sliced
  • 1 cup dry white wine
  • 405 gram diced tomatoes (can, with basil and oregano)
  • 2 tablespoons tomato paste
  • 1 teaspoon dried chilli flakes
  • 1 teaspoon sugar
  • 2 kilogram mussels (scrubbed and debearded, discarding any mussels that will not close when tapped)
  • 1/2 cup parsley, chopped
  • Crusty bread, to serve

How to Make

  • Step 1: Heat oil in a large, deep pan and add onion and garlic and cook gently over low heat for 2 to 3 minutes and then add white wine and bring to the boil and simmer for 3 minutes.

  • Step 2: Add tomato, tomato paste, chilli flakes and sugar and stir well and bring to the boil and then add mussels to the pan, with a lid and cook for a few minutes over high heat, shaking pan occasionally.

  • Step 3: Remove lid and using a slotted spoon, remove mussels as soon as they open and place in a serving dish. discarding any mussels that do not open.

  • Step 4: Remove pan from heat and add parsley and stir well.

  • Step 5: Pour sauce over mussels and serve immediately with crusty bread.
