  • 1 boneless, skinless chicken breast (6 to 8 ounces)
  • Juice and grated rind of 1/2 a lemon
  • 1/2 tablespoon olive oil
  • 1 clove garlic, minced
  • 1/4 teaspoon dried ground rosemary
  • Salt to taste
  • Pepper to taste

How to Make

  • Step 1: Pound the chicken breast with a rubber mallet to 1/2 inch thick.

  • Step 2: In a re-sealable plastic bag, mix together the lemon juice, grated lemon rind, olive oil, garlic, rosemary, salt and pepper.

  • Step 3: Add the chicken breast and seal bag, allow to sit for 10 minutes.

  • Step 4: Line a rimmed baking sheet with parchment paper and pour the chicken breast and juices onto parchment paper.

  • Step 5: Place in a preheated 375 degree Fahrenheit oven and cook for 30 minutes.
