Step 1: Pound the chicken breast with a rubber mallet to 1/2 inch thick.
Step 2: In a re-sealable plastic bag, mix together the lemon juice, grated lemon rind, olive oil, garlic, rosemary, salt and pepper.
Step 3: Add the chicken breast and seal bag, allow to sit for 10 minutes.
Step 4: Line a rimmed baking sheet with parchment paper and pour the chicken breast and juices onto parchment paper.
Step 5: Place in a preheated 375 degree Fahrenheit oven and cook for 30 minutes.
Step 6: Enjoy!
